At Medan Makanan Boon Leong, there was a shop run by an old man with his wife that served fried oyster omelette. This oyster omelette has ingredients such as fresh oysters, potato starch, eggs, pork lard, oil, garlic, onion and a savoury sauce.We watched him add the ingredients one by one mixed together in a large iron cast wok over a large fire. Then he cut portions out to be served with a garnish of chopped spring onion.
The air around the shop had a strong smell of oil and fried onions. We found the texture of the dish to be chewy and consistent. However, there were only 4 pieces of oyster which is less than usual portions of this dish in other restaurants.
